Mid-week cooking

 I think I might have posted about this dish before, but it's one of my favourite simple pasta recipes. It uses things that I always have in the fridge and my cupboards. So when I've forgotten to pick up anything fresh at the shops, this is always a good option and it couldn't be much quicker! If you don't like salty Mediterranean flavours this one isn't for you!

Ingredients include:
-fresh tomatoes
-sundried tomatoes in oil
-a little fresh chilli

Put your tagliatelle on to boil in salty water. Chop all the ingredients up and fry up in a little olive oil until the anchovies have melted away and the fresh tomatoes have broken down and are quite soft. You really don't need to add any salt, I can't stess that enough! Add some pepper though. Drain your pasta once it's al dente and add to the saucepan. Serve with some fresh parsley if you have some.


  1. I need to start using anchovies! I bought some about 6 months ago, but can never bring myself to actually use them.
